Regrowing romaine lettuce is very similar to regrowing green onions, though it does take a bit longer.
Start with a head of romaine lettuce. Chop off the end with a sharp knife, and set it aside. Use the rest of the lettuce as you normally would; in salads, sandwiches, etc.

Place the end of your lettuce in a small cup or bowl and fill with water so that the bottom is sitting in water, but not so that the whole thing is submerged. Set it in a sunny space to grow.

After a few days, the lettuce should start sprouting. Add more water as needed so that the bottom is always in water, and change out the water completely at least once a week.

Once you’ve got stems with several leaves on them, you can pick leaves as needed. You can also transfer the lettuce to a pot with soil so that it can soak up some nutrients that plain water doesn’t provide.

Now you have a little romaine plant! Congratulate yourself on that achievement, and treat yourself to a dish with fresh-grown baby lettuce.
